Lexington Barbecue Slaw

Ingredients

  • 1 med head of cabbage, chopped or thin sliced
  • 1/2 tsp of black or red pepper
  • 1 heaping tsp of salt
  • 1/4 cup of white vinegar ( I use 1/4 of combined water 7 vinegar)
  • 1/4 cup of water
  • 4 Tbsp sugar
  • 4 Tbsp ketchup

Instructions

  1. Chop or slice the cabbage finely. Mix all other ingredients in a large bowl, add the cabbage, stir to mix. Cover and refrigerate until ready to use.

Additional information

I usually use a little less sugar, and about 1/2 head of cabbage, because it makes such a large amount. While it is in refrigerator, I will stir to distribute the liquid which seems to increase as it sits. I will sprinkle with celery seed before serving.
