Shrimp and Cannellini Beans

Very light, good summer meal. It is healthy, fast, and uses ingredients almost always on hand.

  • 3/4 c extra virgin olive oil
  • 1 lemon, this juice, plus the zest
  • 1 1/4 tsp sea salt
  • 2 Tbsp capers, rinsed
  • 1/2 tsp celery salt
  • 2 lbs. cooked, peeled, and cleaned medium shrimp
  • 1 cup cherry tomatoes, cut in half
  • 2 Tbsp minced shallots or spring onions
  • 2 Tbsp chopped parsley


  1. Combine 1/4 c (or less) olive oil, lemon juice, zest, salt, capers, parsley and celery salt in a bowl. Add shrimp and toss well. Cover and marinate at room temperature for 1 hour. In a separate bowl combine beans with some olive oil, tomatoes, and shallots. Cover and let stand for 30 minutes.
  2. When ready to serve combine bean mixture with shrimp mixture and transfer to a platter dressed with lettuce. Serve with pieces of grilled bread .

This can be a great lunch, appetizer or main dish.
